*US Customary:*
1 1/4 cups all-purpose flour
1 1/4 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup sugar
2 large eggs, room temperature
2 tsp pure vanilla extract
1/2 cup buttermilk, or plain kefir, room temperature

Convert the above measurements to metric using a standard conversion chart or calculator.
#### Instructions
1. *Preheat the Oven:* Set your oven to 350°F (177°C) and prepare a cupcake/muffin pan by lining it with cupcake liners.
2. *Mix Dry Ingredients:* In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. *Cream Butter and Sugar:* In the bowl of an electric mixer, beat the butter and sugar together on medium-high speed for about 5 minutes, until thick and fluffy. Remember to scrape down the sides of the bowl as needed.
4. *Add Eggs and Vanilla:* Add the eggs one at a time, beating well after each addition. Then add the vanilla extract and beat until combined.
5. *Combine Wet and Dry Ingredients:* Reduce the mixer speed to medium. Add the flour mixture in three parts, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just incorporated after each addition. Be careful not to overmix. Scrape down the sides of the bowl as needed.
6. *Fill and Bake:* Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 20-23 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
7. *Cool:* Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely to room temperature before frosting.
