My husband and I LOVE The Cheesecake Factory’s Louisiana Chicken Pasta, but my stomach doesn’t do well with too much dairy. I challenged myself to make a version of the pasta that doesn’t use heavy cream. I used lactose-free milk and cook the pasta right in the milk to make it creamy without using heavy cream. I also cook the chicken in flour and cook it with a bit of oil instead of deep frying and add extra veggies to make it a more nutritious meal. It’s not an exact replica of the Cheesecake Factory’s pasta, but it’s close enough and SO GOOD!
INGREDIENTS
Chicken
1lb chicken breast
Garlic salt and pepper
¼ cup flour
½ tbsp butter
Oil
8oz short pasta
1 tbsp butter
1 red, orange, or yellow bell pepper sliced
1/2 red onion sliced
8 ounces mushroom sliced
1/4 tsp red pepper flakes
4 cloves garlic
2 cups chicken broth
1 cup milk
Salt and pepper to taste
¼ cup grated parmesan (and more for topping)
Chopped parsley
2 tsp Cajun seasoning
Homemade Cajun seasoning:
¼ tsp garlic powder
1/2 tsp paprika
1/4 tsp oregano
1/4 tsp thyme
¼ tsp onion powder
1/8 tsp cayenne pepper
1/8 tsp pepper
1/8 tsp salt
