I LOVE burritos! Growing up, my mom would make breakfast burritos every now and then. They always smelled so good, but I never tried them because I didn’t eat eggs. I started eating eggs a couple of years ago, and these burritos were the reason why. My husband and I now look forward to breakfast burritos every weekend. They are SO good and easy to make.
INGREDIENTS (makes 5 small burritos, feeds about 2 people)
Potatoes:
- 2 small Yukon gold potatoes
- Salt
- Pepper
- Onion powder
- Garlic powder
- Paprika
- Olive oil
Eggs:
- ½ bell pepper, diced (any color, but green might give it a different flavor)
- ¼ onion, dived
- 5 eggs
- Olive oil
- ½ tbsp butter
- Salt
- Pepper
Burrito filling:
- Flour tortillas (I used the soft taco size)
- Sliced avocado
- Cheese (I used cheddar)
- Hot sauce (optional, we usually add Tapatio afterwards)
