Kosher signs of an animal can either be the cause that makes the animal Kosher, or it's just a sign that Hashem placed on the animal so we can know that it is Kosher. Regardless of the 2 approaches, the reason why animals must have split hooves and chew their cud is because the spiritual significance of these two allow for one to be able to accomplish what is necessary when eating. The purpose of eating is to incorporate the inanimate, vegetative, and living creatures into the human being. Adam - which means similar (to Above) needs to join all of these with the Adam Above. A person is capable of doing so when there are split hooves - his devotion to Hashem is such that he serves Hashem equally if it involves the right or the left - kindness or severity. If he has a preference for one type of service, then it is about him, not Hashem. Since a person cannot be objective when it comes to themselves, they need to review the above constantly - that is the idea of chewing is cud, something that you chewed over once, you need to chew over again.
