Alu tama is an extremely popular and classic Nepali dish.
Alu tama can literally be translated as potato and tama soup. Tama being fermented bamboo. A simple potato curry is cooked and at the final stages the bamboo is fried (some may not choose to do it) and added to the soup. Another ingredient in this soup very commonly used would be bodi or tane bodi which is the black eyed peas making it alu tama bodi. Garlic, tomatoes and lemon are also used by some people. Bamboo shoots are eaten both fresh ( called Tusha) and fermented ( Tama) in Nepal.
Ingredients for Alu Tama:
1 cup bamboo shoots
5-6 potatoes
1cup Green peas/ Boiled black-eyed peas (soaked overnight)
2 green chilies, thinly sliced
1 tsb turmeric powder
1 tsb garlic/ginger paste
1 tsb Red chilli Powder
1 tsb cumin coriander Powder
1/2 tsb Fenugreek seeds
Salt to taste
3 tsb oil (mustard/sunflower)
1 ltr Water
