蘿蔔魚鬆
材料:
白蘿蔔1斤半
薑1小舊
蒜頭2粒
鯪魚肉半斤
處理:
1. 白蘿蔔,去皮,切兩端,切細片。
2. 大火煲滾半煲水,加入鹽2茶匙,放蘿蔔,水再滾起,熄火,浸30分鐘至透明。
3. 鯪魚肉,放碗內,加入調味料:
a. 生粉2茶匙
b. 鮑魚汁半茶匙
順住一個方向,攪至起膠。
4. 蘿蔔已浸透,擎乾水,清水浸一浸,再用清水沖洗乾淨,擎乾水。
烹調:
1. 大火在鑊中燒熱油3湯匙。
2. 讓鍋鏟黏上油,放魚肉落鑊。
3. 反轉,壓至成魚餅,兩面煎至金黃色。
4. 預備芡汁:
a. 鮑魚汁半茶匙
b. 生粉少許
c. 糖1茶匙
加入清水50毫升,攪勻。
5. 放薑、蒜落鑊,夾起魚餅放砧板上,切成白蘿蔔的大小。
6. 放魚肉及白蘿蔔落鑊炒勻,加入芡汁,炒勻至收汁。
7. 完成,上碟,可享用。
Dace balls with white radish
Ingredients:
White radish 1.5 catty
Ginger (small) 1 No.
Garlics 2 Nos.
Dace meat 0.5 catty
Preparation:
1. White radish, get it peeled, cut both ends. Cut in small pieces.
2. Put salt 2 tsp in half pot of water. Heat up at high flame. Put white radish, wait for boiling up. Turn off fire. Soak for 30 minutes until it becomes transparent.
3. Dace meat, put in a bowl. Add seasoning:
a. Tapioca starch 2 tsp
b. Abalone sauce 0.5 tsp
Stir in one direction until it turns sticky.
4. White radish has been soaked well, hang dry. Soak in tap water. Rinse thoroughly again. Hang dry.
Steps:
1. Heat up oil 3 tbsp at high flame in wok.
2. Put some oil on spatula, put fish meat in wok.
3. Flip over, make it into fish pie. Fry it until both sides have been fried into golden yellow.
4. Prepare sauce:
a. Abalone sauce 0 5 tsp
b. Tapioca starch little
c. Sugar 1 tsp
Add water 50ml, mix well.
5. Put ginger and garlics in wok. Put fish pie on chopping board. Cut it in the same size with the white radish.
6. Put fish and radish into wok. Fry well. Put the sauce, fry until the sauce becomes thick.
7. Complete. Put on plate. Serve.
