When using a pressure cooker, it is also steamed over water. After the beans are soaked, Add the right amount of water to cover the beans , steam for 10-15 minutes . When you squish the bean, the beans are soft. Then drain the water and put sugar. After you put in the sugar, you can check again to see if any of the beans are hard. If there are some hard beans, steam them again for a few minutes. The beans still need to keep its shape, but the beans should have a soft and creamy texture.

I tried this twice. Both times I got gaps between layers and the red beans did not stick to layers. How to do better?

Maybe you can check these steps to improve: 1.When you overlap the white dough and the matcha dough, be careful not to have air between the two layers. You can use a toothpick to poke the dough to release the air in the middle. 2.When the dough is rolled up, be careful not to have large cavities. You can roll it up slightly tight. 3.After the matcha dough and white dough are rolled out, they should be covered with a damp cloth or plastic wrap. If the dough skin is dry, they will not stick together.
