Mushrooms do not undergo the Maillard reaction when cooking, as they do not contain significant amounts of reducing sugars or amino acids required for this reaction to occur. However, when mushrooms are cooked, they undergo a different type of reaction called caramelization, which is the breakdown of sugars in the mushrooms that results in a brown color and a rich flavor. This reaction gives cooked mushrooms their characteristic umami flavor and meaty texture. Additionally, the heat causes the moisture to evaporate from the mushrooms, which concentrates their flavor and creates a more intense taste. So while mushrooms do not undergo the Maillard reaction when cooked, they still undergo chemical changes that result in a delicious and desirable flavor.

Wine.com. Although quite often you can find it at a local grocery store there usually won’t be a big selection but they’ll usually have one bottle. Also a local liquor store that specializes in wine sales should have it 🍻

What type of Madeira wine? Sercial to Malmsey can have an extreme difference in flavor. The cheap stuff usually lands in the middle. The color of the wine you used looked like a Malmsey, which would add a lot of maple and toffee notes to your dish. You should really be more specific as it does make a difference. Just trying to help. Keep cooking!

Another great video as always. I never knew that Madeira wine was used to toast the Declaration of Independence.

Would this go well with Thanksgiving turkey?

Yes the Madera sauce goes well with poultry beef and pork. It would make a nice gravy also - same recipe just make it a little thicker with the addition of more roux or cornstarch to thicken it.
