Madkekalu/Moth beans/Matki is one of the most nutritious Indian legumes yet less consumed. When sprouted it is rich in carbohydrates, proteins, vitamins (ascorbic acid and niacin) and minerals like calcium, iron, magnesium, zinc, etc., and phenolic compounds like cinnamic acid, caffeic acid, ferulic acid, etc.
Pumpkins contain antioxidants, such as alpha-carotene, beta-carotene and beta-cryptoxanthin and so is a rich source of Vitamin A.
This recipe uses a combination of sprouted moth bean and pumpkin and therefore is a treasure house of nutrition.
