Buccaneer Bob’s Gold and Black Rum Essence Recipe:
100ml white unaged rum
100ml fresh cleared rum backset from the boiler after a rum distillation
1. Mix the rum and backset. If it is cloudy, set it aside for a week until it clears, then siphon off the cleared essence into a new bottle.
2. Use approximately 30ml of essence per 750ml rum for Gold Rum, and approximately 60ml of essence per 750ml rum to make Dark Rum.

Bearded and Bored’s Dark Spiced Rum Recipe:
750ml Rum - for best results use rum aged on Bourbon-soaked charred white oak
60ml Dark Rum Essence - see recipe above
1tsp vanilla extract or 2-inch piece of vanilla bean
3 allspice berries
1 whole clove
1/8tsp ground cardamom or 1/2 cardamom pod
1/2 cinnamon stick
1/8tsp nutmeg
2 -1inch wide strip of orange peel, no pith
1/8tsp black pepper
3/4inch cube fresh ginger, bruised
1-2 Tbsp Dark Cane Syrup or Molasses - optional
1. To make Dark Spiced Rum add 60ml of rum essence (see recipe for essence) to 750ml of 40+%abv rum. For a better flavor you can age your rum on charred American white oak that has been soaked in bourbon, or previously used to aged a bourbon or whiskey.
2. You can speed up the aging by using an Ultrasonic Cleaner to force aged the rum, or use hot/cold cycling to force age the rum.
3. Toast spices EXCEPT for ginger, orange peel and vanilla in a dry sauté pan until fragrant(1-2 minutes on medium heat), then add to 750ml aged dark rum. Let sit for 24 hours. Taste and decide if you want it to go longer. Taste every 24 hours to make sure the spices don't get too strong. It will most likely be ready in 48 hours of total soak time.
4. Strain the spiced rum through cloth to remove fine spice particulate. Filter through coffee filters 6 times to remove any cloudiness.
5. OPTIONAL - Taste the rum and decide if you want to add some sweetness to adjust the flavor. If so, add 1tsp of cane syrup or molasses, mix thoroughly, and taste. Add syrup 1tsp at a time, tasting between each addition until you reach the desired flavor.
6. OTHER OPTION - For darker color and more robust flavor, add straight fresh rum backset, 1 tsp at a time, tasting after each addition. Straight backset is very bitter, so be careful.
