We went through a 3 to 5 year, "era of the muffins". While I did have multiple muffin recipies, I often reverted to a basic muffin recipie that had sugar in it but wasnt particularly sweet. From that recipie, I made both savory (eliminated the sugar) and sweet muffins of all types using what was in the kitchen at the time. And yes, I generally made a double recipie and froze as soon as possible in repurposed bread bags; if I didn't freeze right away there weren't enough left to freeze. Much of this time was the era of packed lunches. I would put the frozen muffin into the lunch while frozen and let it help keep the lunch cooler.

@@AmandaOnAHustle We are now no to low sugar and low starchy carbs so those baking books went bye bye when we down sized. Due to the acid in both the lemon and the berries, I would use a recipie calling for buttermilk to address the levening agents. I would use partially frozen raspberries rolled in flour for a more constituted raspberry at the end of the bake or, partially frozen raspberry rolled in granular table sugar for a sweeter but softer burst of flavor. I would probably use about 2 teaspoons of lemon jest per cup of flour; fine microplaned but fine box grater would do (box grates finely cross chopped would work) scape all,the oily juice from your grating and chopping. . I would add a bit more sugar so that the batter sweetens the lemon jest. I would use sweet butter or butter flavored Crisco.

Glass baking dishes cook hotter and often cutting the oven temperature by 25 degrees takes care of it. Those super duper, dark colored, coated, heavy/ thick cookie trays cook hotter and faster too.

I have to eat breakfast as well but I make all my goodies from scratch now one its cheaper and two its healthier and less sodium. I have to watch what I eat because I'm on high blood pressure medication

Muffins are generally cheaper to make than cookies; always were and long before the current high prices on butter and eggs.
