Gori and beans or trotters and beans is another traditional recipe that we enjoyed when I still lived with my inlaws after first getting married. Offal may have lost favour to many in the community over the years but still makes for a delicious meal when we do get it.
Ingredients
6 gori (trotters) cleaned and cut into 16-18 pieces
For boiling Gori
1 tsp hurdee (tumeric) powder
2 bay leaves
2-3 pieces of cinnamon sticks
2 tbs vinegar
For the curry
2 cups broad beans, boiled
1/4 cup oil
1 med onion, sliced
2 med tomatoes, chopped
Biryani mix including:
2 large cinnamon sticks
2 bay leaves
2-3 black elaichi (cardamom)
2 green elaichi (cardamom)
~1 tsp Somph (Fennel) seeds
6 cloves
1 tsp crushed ginger and garlic
2 tbs mixed masala
1 tsp garam masala
1 tsp dhania (coriander) powder
1 tsp jeera (cumin) powder
1 tsp hurdee (tumeric) powder
1 tsp rough salt (adjust later to taste)
a handful of fresh thyme
a handful of curry leaves
fresh dhania to garnish
1 additional tsp fine salt
