Recipe:
choux pastry (2 cups):
1 cup water
1 tsp salt
4 tb butter
3/4 cup flour (12 tb flour) ... I said this incorrectly in the video
2 eggs
2 egg whites
quenelle mix:
1 1/4 lb lean fish filet
1/2 tsp salt
1/4 white pepper
4 to 6 to 8 tb heavy whipping cream
2 tb truffle or big pinch nutmeg
fish stock or salted water for poaching
Dieppoise sauce:
3 tb butter
4 tb flour
1 cup poaching liquid
3/4 cup milk
2 egg yolks mixed with 1/2 cup whipping cream
salt and pepp
drops of lemon juic
