i think a very common struggle for iranians is explaining the difference between "ash" and "soup" in our language :)

It’s seriously different ,we have soup too What differentiates these two is Benshan and Sabzi Ash.

Haha yeah I was talking to an Iranian guy last year and I was trying to explain to him my uncle was born in Iraq but his mother was born in Iran, so he had no idea where I meant when I said Iraq really, really badly... like ih-rák like a drying rack. oops. He was so confused (he was still in the early process of learning English) Turns out it's pronounced Ayraaq with a throaty q. Like, how did I even not KNOW that? 😕

Had this in a vegan restaurant and it was amazing. Didn’t realise how easy it was to make at home! 100% going to make this now! It was so fragrant and filling without being heavy and so good for you without feeling like you’re eating healthily.

I too have a Persian lover and this is one of our favorites. I do all of the cooking because he’s useless in the kitchen so over the lats 2 1/2 years I’ve been learning. When I make ash a jo for him, the recipe I use has yellow split peas for protein and leaks sautéed with the onion. It makes the stew extra creamy and the leeks taste really good. We’re also both vegan so when I try to make it really authentic, I add shredded jack fruit to mimic chicken. I highly recommend this method, it’s SO good.

Your Ash is a little watery. We normally have it a little thicker. For that you can add a table spoon of flour into a glass of cold water, mix and add it and let it cook. It makes it thicker❤

persian lentil soup is called adasi and its suuuuper simple its just lentil potatoes onions and maybe carrots. along with turmeric and salt and pepper
