For the excellent Mamulia we used for the dough: A) 3 glasses (capacity 200 ml) rustic flour (the leavened, from durum wheat) 360 gr. B) 3.25 glasses of Flour "00" 390 gr. C) One spoon, medium full, Baking powder 15 g. D) One sachet of Vanilla 8 gr. E) 150 g sugar, is 0.75 of the glass. F) 150 ml of milk, is 0.75 of the glass. G) 375 g of unsalted Milk Butter, preferably "Lebanese".
For the filling we used: A) 1½ glasses, 180 g coarsely ground pistachios of Aegina (Halepiana). B) 50 g sugar, is 0.25 of the glass. C) A full spoonful of melted unsalted buttermilk, 25 gr. D) A spoonful of flower water, 10 ml.
After baking, we sprayed them with 1-2 spoons of flower water and we added 2-3 spoons of powdered sugar.
Note. The dough needs to stay for at least 2 hours to rest. If it is a hot day, put it in the fridge.
