The Easiest and Most Delicious Pudding. It is Perfect for Summer. Simple ingredients and some secrets
Ingredients-
3 tbsp custard powder Mixed with 1/4 cup milk
1 +1/2 cup milk, divided
1/3 cup sugar
1 cup Amul whipping cream (measured before whipping)
Cake risk/ milk rusk, as required
Mixed fruit juice
Mango puree
To garnish-
Cubed mangoes
Chopped strawberries or pomegranate arils
Mint leaves
Method-
Combine the custard milk mixture with 1 cup milk and transfer to a saucepan.
Heat the pan and cook the mixture on a low flame with constant stirring until it thickens.
At this stage add the remaining 1/2 cup milk and mix well. Turn off the flame and mix till it thickens.
Remove and add in sugar to this. Stir for 2-3 mins until the mixture cools.
Whip it up with a double beater and add this to the chilled whipping cream in parts and whip it up again. The mixture should have soft peaks.
Now, take a rusk and dip it into the mixed fruit juice.
Layer the base of your pudding dish with the soaked rusk, followed by the custard cream and then the mango puree.
Repeat each layer twice.
Refrigerate for 30 mins and then top with chopped mangoes, strawberries/ pomegranate arils, mint leaves and serve immediately or refrigerate until use.

Mix custard powder and some milk together and then mix with the rest of the milk. This ensures a smooth mixture and prevents any lump formation.
Ensure to keep the flame low at all times and stir constantly while cooking the custard mix.
Add sugar as per desired sweetness
Mix the sugar very well into the custard base and cool it before adding in the cream. Also, add the custard mix in parts.
Do not soak the rusk for long into the fruit juice.
Do not use a deep pudding dish such that while layering it comes upto two layers max. So, ensure to keep some space on top for the garnish.
Tastes best when chilled.
