Ingredients:
1 liter full cream milk
1/2 cup basmati rice
1 cup sugar (adjust to taste)
1/4 teaspoon cardamom powder
2 large ripe mangoes
2 tablespoons chopped nuts (almonds, pistachios, cashews)
A few saffron strands (optional)
1 tablespoon ghee (clarified butter)
Fresh mint leaves or rose petals for garnish (optional)
Instructions:
1. Preparation:
Step 1: Wash and soak 1/2 cup of basmati rice in water for 30 minutes.
Step 2: Peel and chop 2 large ripe mangoes into small cubes. Blend half of the mango pieces into a smooth puree and set aside the rest for garnishing.
2. Cooking the Rice:
Step 3: Heat 1 tablespoon of ghee in a heavy-bottomed pan. Drain the soaked rice and add it to the pan. Sauté for 2-3 minutes on medium heat until the rice is slightly golden.
Step 4: Pour in 1 liter of full cream milk and bring it to a boil. Once it boils, reduce the heat to low and let it simmer. Stir occasionally to prevent the rice from sticking to the bottom.
3. Making the Kheer:
Step 5: After about 20-25 minutes, the rice should be cooked and the milk will have thickened. Add 1 cup of sugar and stir well until it dissolves completely.
Step 6: Add 1/4 teaspoon of cardamom powder and a few saffron strands (if using). Mix well.
4. Adding Mango:
Step 7: Allow the kheer to cool slightly before adding the mango puree to prevent curdling. Stir in the mango puree and mix until well combined.
5. Final Touches:
Step 8: Add the chopped nuts (almonds, pistachios, cashews) and mix well. Save a few for garnishing.
Step 9: Let the kheer cool completely before refrigerating it for at least 1-2 hours. Mango kheer tastes best when chilled.
6. Serving:
Step 10: Serve the mango kheer chilled, garnished with the remaining mango cubes, chopped nuts, and fresh mint leaves or rose petals for a beautiful presentation.
