Maple Roasted Sweet Potatoes are coated with pure maple syrup and roasted until caramelized and tender. You can stop at this step if you want OR.... take it up a level by roasting pecans. So Yummy! If you're willing to go another step, definitely do the Sage Brown Butter.

Ingredients:
2 large sweet potatoes
1/4 cup of maple syrup
2 tablespoons of olive oil
salt & pepper to taste
Preheat oven to 400 degrees (375 if it's a convection oven) and line a sheet pan with parchment paper. It makes for easy clean up and no sticking!
1. Peel & cut sweet potatoes into uniform pieces, preferably about 3/4 inch. This ensures even cooking.
2. Mix the oil, male syrup & salt & pepper in a bowl until well coated.
3. Spread in a single layer and bake for 30 to 40 minutes. Half way through, mix the potatoes to evenly coat again with glaze for the remaining time.
4. Remove from oven, serve and enjoy. If you're doing the next steps, see pecan recipe below.
Maple Roasted Pecans:
Ingredients:
1 cup of pecans (you really just need a few, but they are great for snacking)
2 tablespoons of maple syrup
salt to taste
1. Toss all ingredients until pecans are evenly coated.
2. Poor evenly on a baking sheet lined with parchment paper.
3. Add to the oven for the last 10 minutes of baking depending on your oven. If you're not sure, add them for the last 7 minutes.
4. Remove from oven and toss with the potatoes. Leave them whole or crunch them up to sprinkle through out.
5. Serve and Enjoy. Unless your're doing the next level. If so, see below for the Sage Brown Butter.
Sage Brown Butter:
Ingredients
1 stick of unsalted butter
3 to 4 sage leaves
salt & pepper to taste
1. In a medium sauce pan over low to medium heat, melt butter.
2. Add the sage leaves and allow the water to evaporate (sizzling and popping you will hear), milk solids will start to turn brown at the bottom of the pan.
3. Process takes about 3 to 5 minutes.
4. Sprinkle sage & butter with salt and pepper.
5. Glaze the sweet potatoes and pecans with the butter mixture. Garnish with Sage leaves and Enjoy.
