Bake in a water bath at 150°C/302℉-40 minutes (or steam for 35 minutes)
[Preparation steps]
1. Mix the eggs and sugar together and set aside.
2. Mix a small amount of milk with the matcha powder until smooth, add the remaining milk, whipping cream, and mascarpone cheese, and stir until well combined. Heat over low heat until it begins to simmer.
3. Slowly pour the mixture from step two into the mixture from step one, then strain.
4. To make the caramel sauce, pour the sugar into a pot, add a small amount of water, and cook over low heat until it turns a caramel color. Add the other portion of warm water, shake until evenly mixed, and pour into a 5-inch non-stick cake pan with a fixed bottom.
5. Pour the matcha pudding mixture into the mold from step four, bake in a water bath or steam. After baking, let it cool, refrigerate overnight, and remove from the mold the next day before serving.
