[Instructions]
① Beat the eggs and sugar until well combined, then whisk over hot water until the egg mixture reaches about 35°C-38°C/95℉-100℉. Remove from heat and continue whisking until thickened, reaching a state where the batter doesn't immediately disappear when dripped.
② Sift in cake flour and matcha powder gradually, folding until no dry flour remains.
③ Gradually add melted unsalted butter, around 40°C-50°C/104℉-122℉, into the batter, folding until evenly combined.
④ Line a 15cm diameter mold with parchment paper, pour in the batter, bake, and let cool after removing from the oven.
⑤ Slice the cooled matcha cake in half horizontally, spread red bean paste on one half, mix mascarpone cheese and powdered sugar together and pipe onto the red bean paste, then cover with the other half, dust with powdered sugar, and it's done!
