Okay, I’m a line cook; I cook every day, whether it be at home or at work or both. All I think about is food pretty much. This curry is the tastiest damn thing I’ve made in months. So balanced and nuanced and warming and floral and delicious. Wow. Thank you for the recipe-though i made some mods like whisking in some peanut butter and upping the sugar and dry spices a bit to match my taste. I know what I’m gonna make for family meal next shift now !

This is my favorite dish at my local Thai restaurant. They serve a version that is very similar, but has chicken instead of beef and adds avocado chunks to the potatoes for another textual component.

Avocado Ina curry? That sounds hideous. The only textural component that adds is mush. Thai people don’t use avocado, period. It sounds like your local is trying to be different but not really succeeding.

What I like most about this video (other than the food looks absolutely yum!) is that Andy is honest about the cooking process (i.e. slightly overcooking the beef). Texture is a key element for me in the overall experience, and when using pressure cooker it's very easy to under or overcook unless you use a cooker regularly. I always recommend slow cooking over a stove and regularly stirring (to scrape the caramelised bits at the bottom and edges). If time poor and using a cooker, I divide the cooking time down in to 30 minute breaks so that I can check up on the meat and when close to done, I can finish it off over a stove. Thanks Andy for a great recipe! :)

I just made a mistake making chopped beef/roast potatoes. I had too much stock, so halfway through I drained it out, and made a nice gravy while it finished.. forgot about it, overcooked it- but the gravy mixed in created a sirloin mashed potatoes

Hands down a bangin' recipe! Cooked it the other night, even the 2 year old and 7 month old loved it. The butter chicken recipe was amazing (best butter chicken i have ever had), and the buttermilk chicken burgers with the milk buns #bussin

I worked with a Thai woman and she would always bring me in Thai food. This dish was always my favourite, so much so that I cook it at home for myself. She uses pork belly and it just melts in your mouth when it's slow cooked. She would also add carrots, I would have it with some bread instead of rice because I prefer it alot more soupy.

Thank you for the recipe, I'm very happy you used pre-grounded spices because that is what I have in my pantry, it makes making the dish so much easier to do, it's good to know the curry turns out delicious using pre-grounded spices. I prefer medium grain rice over the traditional Jasmine rice, so this is the perfect curry for me!

Someone correct me if I’m wrong. While I love Andy’s vids, I do have to point out this recipe is almost IDENTICAL to that of RecipeTin Eats’ Massaman curry (kzitem.info/news/bejne/uYmn4H6ge6FphIY), posted 3 years prior. Yes, a few tweaks here and there, but the ingredients, their order, and procedures (e.g. braising beef in stock & charring aromatics) are clearly copied from Nagi’s. Idk much about unspoken rules btwn KZitem chefs, but I personally would’ve given Nagi credit as well for the original recipe. Sorry if it’s the other way around!

My father used to make this for us with leftovers from a Sunday roast, using left over roast potatoes, chunks of pork shoulder and would add peanuts towards the end. Absolutely delicious and a great way to utilise leftovers!

I usually add chopped peanuts, a tbs or two of peanut butter. Many Thai massaman curries have this. Also garnish with cilantro, and chunks of avocado(less common but elevates textures) Chopped red pepper is also good for color and more veg.

In thailand we don't add fish sauce, tamarind and sugar in the curry soup before cook totato and meat ..... We will add seasonings after the meat and potatoes are cooked...
