Matcha Sablé Cookies
Unsalted Butter···70g

Matcha Powder···8g

[How to Make]
① To make the matcha sablé dough, mix the softened butter with powdered sugar until well combined. Gradually add the egg, stirring until smooth.
② Sift the cake flour and matcha powder into the mixture and mix until a dough forms. Roll out the dough to a thickness of 3mm and freeze for one hour.
③ Remove the dough from the freezer, cut out desired shapes and sizes using cookie cutters. Bake the cookies and let them cool completely.
④ To make the matcha cream cheese filling, mix the melted white chocolate and matcha powder until well combined. Add this mixture to the cream cheese and whip until smooth. Transfer the filling to a piping bag.
⑤ To make the matcha ganache, add the matcha powder to the melted white chocolate, then add the warm whipping cream and stir until smooth. Refrigerate for 15 minutes, then transfer to a piping bag.
⑥ Pipe the matcha cream cheese onto a cookie, then pipe the matcha ganache in the center. Place another cookie on top to create a sandwich. Seal the cookies in an airtight container and refrigerate for 30 minutes before serving.
