I share with you the recipe for Mauritian Dal puri / dholl puri.
In my opinion, in Mauritian cuisine, if there is one essential that deserves to be tasted by anyone visiting Mauritius, it is dholl puri. It is a kind of pancake or savory pancake filled with dholl gram (split peas) and garnished with curry and satini/chutney

Ingredients
400g dholl gram (split peas)
1 tsp turmeric powder
1 tsp of salt
1 tsp ground cumin
for the dough

500g all-purpose flour
300 ml dholl cooking water
1 tbsp of oil + 1 tsp to coat the dough
oil for cooking
Note: cover the dhall puri well so that they don't harden.
