Dude you just keep coming at me with the most amazing recipes! Don't stop, keep them coming. I read cookbooks like people read novels. So your channel is like a volume of a BBQ encyclopedia. I just wouldn't know where to categorize you. A for awesome smoked foods... S for smoked foods done awesomely?

I made these meatballs yesterday for subs. I used hot soppressata because I couldn't find truffle. Still came out amazing. I started grating the soppressata, but it kind of gummed up. So I stopp2d and threw it in the freezer for an hour. Much easier after that. Great recipe, Tom. As always, please keep em coming

That's a great meatball recipe. They'd also be tasty in a sub roll smothered in mozzarella.😋👍🏼 Excellent pizza. Gonna try it next time I make one at home.

KitchenAid makes a spiral-shaped dough hook that is so much better than the standard "flat" dough hook. It's worth getting... Another tool worth getting is a small round pizza peel for turning. The big peel is used to put the pizza in and take it out. The small round one is for turning.

Looks amazing, but I felt the roof of my mouth burn on that first bite. I definitely need to try that recipe on my Ooni 3. Thanks for calling it a "tea towel". My wife and kids laugh at me every time I say that. It must be a mid-west thing

Nice combo...the oven might be a little too hot as some of the toppings didn't cook as fast as the crust...do love a medium browned crust and topping though...

Did you just really make pizza dough and cook it in the same day? Could I please get a more specific description of the rest times please? You'll end up with a thicker sauce, but you'll lose a lot of the fresh tomato flavor. It's a tradeoff.

Chef Tom: Am confused. You took the time to squeeze the liquid from the shallots but then used fresh mozzarella with its moisture and then ricotta (again juicy). Why?

The liquid was removed from shallots in order for the meatballs to bind together. The cheeses were added after the meatballs were cooked, so that wouldn't affect how they held together.
