THE FARM STAND MEATLOAF PANINI
INGREDIENTS:
Meatloaf ( recipe below)
Italian Panini Bread or other sturdy dense bread. No soft bread.
Famous Dave’s Signature Sweet & Spicy Pickle Relish
Swiss Cheese slices
Tomato Glaze ( recipe below)
Let’s Make it:
To each piece of bread , lightly spread with glaze. Add meatloaf rectangle to one slice of bread, add your desired amount of pickle relish , top with Swiss cheese. Toast sandwich in a preheated Panini Press till toasty and golden. Cut in halve and enjoy!
DAVE’S FAMOUS MEATLOAF
2 pounds 85% lean ground beef or brisket burger.
1 large egg
1 tsp salt
1/2 tsp ground pepper
1/4 cup ketchup
1/4 cup chopped canned tomatoes ( home canned if possible)
1/4 cup crushed saltines crackers
1 large onion, caramelized and chopped. ( see recipe below)
GLAZE
1 cup ketchup
3 Tbsp. Light brown sugar
LETS MAKE IT-
Preheat oven to 350F. To a stand mixer, add the first 8 ingredients; mix for 1 minute . Transfer the mixture to a rimmed half sheet pan.
In a small bowl, mix the glaze ingredients. Add to the top of meat mixture and spread out evenly. Bake for 35-40 minutes or until it reaches 160F with a probe thermometer. Add more glaze if desired. Remove from oven and let rest for 15 minutes. Cut into rectangles the size of bread slices.
HOW TO CARAMELIZE ONION
1 very large sweet onion
2 Tbsp. Butter
3 teaspoons sugar
3 teaspoons water
To a skillet, melt the butter over medium-high heat; add onions and let them cook for 2 minutes before stirring. Then, stir and cook till the onions are light brown.
Add the sugar and water and continue to cook till the onions are dark brown and sticky. Remove from heat and let cool to room temp before using in the meatloaf.
