Mumbai’s Famous Aflatoon: A Delightful Sweet Barfi
Ingredients
Ghee ( clarified butter) - 1/2 cup
Semolina (Rava) - 3/4 cup
Sugar - 3/4 cup
Milk powder - 3/4 cup
Mava/ khoya ( crumbled)- 200 g
Milk - 200 ml / 1 cup
Chopped nuts of your choice - 1/2 cup
Elaichi powder - 1.5 tsp
Method
• Heat a heavy bottomed pan and add ghee into it.
• Reduce the flame to low and add semolina.
• Stir continuously on low flame until the semolina turns golden brown.
• Add sugar and milk powder and continue stirring.
• Keep stirring the mixture continuously until it changes its colour to golden brown.
• Now add milk, khoya, chopped nuts and elaichi powder.
Two most important steps of this recipe -
The flame will be low throughout the cooking process
Stirring continuously is a must
*Keep stirring until the mixture starts leaving the sides of the pan and gathers into a lump.
• Remove the mixture from the flame.
• Immediately spread it onto a tray, greased with ghee.
• Leave it for an hour .
• When the mixture cools down to room temperature, make cuts of equal sizes.
• Leave it for 6 to 8 hrs more and then cut out equal sized pieces to serve.
* Garnish with chopped almonds and enjoy the delicious Aflatoon.
