Ingredients listed below:
Risotto Recipe:
- 8 oz risotto rice (arborio or canaroli)
- 5-6 cups of vegetable stock (this measurement has a range due to the nature of risotto, it's never an exact amount of liquid)
- 1/2 cup of finely diced shallots (roughly 1/2 of a large shallot)
- 2 tbsp of minced garlic (roughly 1 garlic clove)
- 1/3 cup of finely diced celery (roughly 2 stalks)
- 2 cups of medium diced cremini mushrooms
- 1 cup of medium diced shiitake mushrooms
- 2 cups of medium diced asparagus (roughly 4 stalks)
- 1.5 cups of dry white wine
- 6 tbsp of cold medium diced butter
- 1/2 cup of grated parmesan cheese
- 1 tsp of fresh lemon juice
- 2-3 tbsp of sliced scallions & parsley for garnish
