These mussel croquettes are very creamy and soft, with large chunks of mussels inside and a delicious béchamel.
INGREDIENTS:
- Mussels (2 kg with shell, 240 g without shell)
- White wine (a cup)
- One onion
- Salt (a pinch)
- Olive oil (3 tablespoon)
- Butter (2 tablespoon or 20 g)
- Flour (5 tablespoon)
- Mussels broth (100 ml)
- Milk (600 ml)
To form the croquettes:
- Eggs (2)
- Bread crumbs
