Ingredients:
Butter: 1/2 Cup +2TBS (50 gm) ( Room temperature. Should be soft to touch)
White/Caster Sugar: 1/2 Cup+3TBS+1TSP (165 gm)
Vanilla essence/extract 1 tsp
Eggs 2 (room temperature)
Flour: 2 Cups+5TBS+1TSP (375 gm)
Ginger powder 1 tbsp
Baking powder 2 ¼ tsp
Baking soda 1/4 tsp
Toasted and Crushed almonds: 1/3 Cup (100 gm)
Chocolate chips: 1/3 Cup (100 gm)
Oven:
320 Fahrenheit or 160 Celsius
Making the Dough
1. In a large bowl beat the butter and sugar until you get a creamy mixture.
2. Add one egg at a to the butter mixture and beat until all the eggs are mixed.
3. Put flour, baking powder, ginger powder, and baking soda into a sifter and sift these ingredients over the butter mixture. This ensures that you don’t get any lumps in the mixture.
4. DO NOT use the hand mixer for this step. Take a spatula or a wooden spoon and mix.
5.Optional: Add toasted crushed almonds, peanuts, or any other nuts you want.
6. Add chocolate chips or chopped chocolate bars to taste and mix.
7. Refrigerate the cookie mixture overnight or for at least 1-5 hours for the best results.
Baking the Cookies
Preheat the oven at 160 Celcius or 320 Fahrenheit.
While your oven is preheating take your cookie mixture out of the fridge and wait.
Once the oven is ready, grease your tray with butter and make medium-sized balls. Press the balls slightly and put them to bake.
Bake the cookies for 20 to 45 minutes or until your cookies are golden brown.
Set them on the cooling rack and serve!
