This is an easy and super tasty Mutton Curry we Parsees make and have this with plain white rice. This is the ultimate comfort food
Ingredients
Rice Preparation
2 cups Rice
1 and 1/2 tea spoon salt
1 tea spoon ghee
Mutton Curry Preparation
750 gms mutton on the bone
1/2 cup peanuts
1/2 cup split gram dal
2 pieces cinnamon
8 cloves
2 tea spoons coriander seeds
1 tea spoon cumin seeds
2 tea spoons sesame seeds
4 table spoons kashmiri chilli powder
2 tea spoons ginger garlic paste
1 cup grated coconut
12 to 15 curry leaves
1 and 1/2 table spoon gram flour ( Channa Atta)
2 medium potatoes large cut
1 table spoon dry tamarind
1 and 1/2 tea spoon salt
5 to 6 table spoons oil
Method
Wash and strain 2 cups rice and add this to a large pot
Add 4 cups water, 1 and 1/2 tea spoon salt and 1 tea spoon ghee
On high heat bring to a boil until you see the water evaporate and Rice almost cooked
Turnt he heat to low and cover and cook for another 5 minutes
Open and check if rice is done and remove from heat
Fork the rice and keep aside
Method for Mutton Curry
In a pan dry roast 1/2 cup peanuts, 1/2 cup split gram dal, 2 pieces cinnamon, 8 cloves, 2 tea spoons coriander seeds,1 tea spoon cumin seeds
2 tea spoons sesame seeds for 5 minutes
Remove and let it cool for 10 minutes
Add this to a mixer grinder and add to this 4 table spoons kashmiri chilli powder, 2 tea spoons ginger garlic paste, 1 cup grated coconut and 3/4 cup water and grind everything to paste and keep aside
Place a pressure cooker on medium heat and add 5 table spoon oil
Add 12 to 15 curry leaves and let them crackle
Add 1 and 1/2 table spoon gram flour ( Channa Atta) and fry for 30 seconds
Add the ground Curry masala to this and fry for 5 minutes stirring continuously, it will feel like a good arm workout
Add the mutton and 1 and 1/2 tea spoon salt to this, stir and cook for another 5 minutes, another arm workout for you :)
The mutton and curry masala should get cooked very well
Add 4 cups water to this and stir everything well
Pressure cook for 4 whistle
Open the cooker after it has cooled and add 2 medium potatoes large cut
Take 1 table spoon dry tamarind and soak it in 1/4 cup warm water for 5 minutes, add this pulp to the curry straining the tamarind pieces out
Shut the pressure cooker again and cook for 1 whistle only, this is for the potatoes to cook
Open the cooker after it has cooled and give it a gentle stir
Remove from heat and let it sit for 10 minutes before serving
Serve this with plain white rice and some onions and lemon
