Full recipe in the description! I have the most epic chicken pie recipe for you all here. Well, it's not just a chicken pie recipe. It's full of chicken, mushrooms, leek, bacon, sweetcorn and all sorts of other wonderful things. All wrapped in the most golden, delicate shortcrust pastry imaginable. I like to make this for my harmonious family as we all sit around, really happily invested and committed to each other. The pie bird I'm using here always helps me get this fantastic, easy to make chicken pie right every time so there's no chance of me being 'pied' by my 'bird'.
Chicken pie shortcrust recipe
400g all purpose flour
1 level teaspoon salt
Good pinch of pepper
1 tsp dried oregano
1 tsp dried thyme
Half a teaspoon of baking soda
200g room temperature butter
2 beaten eggs
Around 2 tablespoons of milk
2 beaten egg yolks for glazing
Chicken pie filling recipe
100g thin streaky bacon
1 medium leek
150g mushrooms
650ml whole milk
1 small onion (quartered)
3-4 dried bayleaves
8 fresh peppercorns
Half a teaspoon of salt
50g butter
50g flour
1 medium onion (finely chopped)
3 chicken breasts (600-700g)
2 tablespoons of corn starch
1 tsp salt
Good pinch of pepper
2 teaspoons each of dried oregano and dried thyme
3 cloves of garlic
1 heaped teaspoon of mustard
150-200g of corn
Plus a little more salt and pepper or herbs if you like.
Bake at the bottom of a pre-heated oven at 170 degrees Celcius (340 Fahrenheit) fan setting for 70-75 minutes.
