Dear Chef! A question!! I would like to ask your Way to prepare home Pizza Dough with Poolish and Biga!! What is the Quantity of ingredients, yeast, water temperature, resting time, etc!! I usually store 6 medium size in the fridge in indivudual boxes resting fermentation. Looking forward to your professional recepit! Much appreciated!!
