What is a chicken pot pie? No, it's a not a pie containing 'baked' chicken it's actually a very nice pie made using either rotisserie chicken, or leftovers if you have them. Its a fantastic way to use up bits and bobs like vegetables. Got a piece of ham that needs using up? throw it in! Got some semi ropey looking green beans? throw them in! The secret to this chicken pot pie is having good balance of flavours. we braise down those veggies so they go nice and sweet, the rich creamy sauce and the pokey English mustard all add together to create what i think, is a banging chicken pie.
Now, some folks will of course be yelling 'its not a pie if it doesn't have a base!' to them I would say 'yes, i agree. However in the warmer months I want something a little less pastry laden' You can actually have either or, it's your choice. It is also a good idea to make sure your filling is fully cold, and your pastry is fridge cold too. If everything is too warm, then the pastry is just going sink into the filling and be a total disaster.
To make my chicken pot pie, you will need:
►300-350g of shredded cooked chicken (leftovers are great for this)
►1 medium sized leek
►2 medium sized carrots
►2 bay leaves
►About 700ml of chicken stock
►40g of unsalted butter
►40g of plain flour
►1-2 tsp of English mustard
►About 1 tbsp of fresh thyme
►2 decent handfuls of frozen peas
►100ml of double cream
►Olive oil for cooking
►Salt & pepper
Serve with some buttered new potatoes and vegetables of your choice.
