Great to see the 3 Beasts of Dufftown lined up against each other. And Scott, I'm with you on the 16yo. My bottle's been open now for about 4 months and the level is well below the shoulder - and it's superb. Really intensive, luscious mouthfeel and some fantastic drying European oak spices on the finish. And yes, it doesn't need to be first-fill sherry butts because balance is easier to achieve when the distillery character is not swamped by overpowering casks. Bart, you'll just need to stick with it a bit and give it another try in a couple of months - if Scott will let you. Oh, and then there's the thorny issue of the 2.81 distillation. Well, you really do need a PhD to understand the process. I've read it through twice and I'm still not there yet. But here's the way Mortlach's former brand ambassador put it - Georgie Bell, who by the way has studied this stuff and knows what she's talking about: Good Luck! "Mortlach distillery has 6 stills, 3 wash stills and 3 spirit stills and what sets them apart is that all of their stills are different shapes and sizes and they all work pretty much independently from one another. They don’t work in perfect pairs but create three different spirit characters from the three spirit stills which are then blended to create the house style. “It’s like having three distilleries at the one still house”, Georgie Bell explains. The first of these is the pairing of wash still 3 and spirit still 3 to create a malty distillate. Wash stills 1 and 2 work as a pair, which is unusual. We then take everything that has run through and split it into half, the heads and the tails. The first half from wash stills 1 and 2, the low wines the lighter half, are run through spirit still number 2 which creates a lighter floral distillate. The heavier half of wash stills 1 and 2 is run that through spirit still number 2 once but no cuts are taken. Everything that has run through is run through a second time but with the tails from wash stills 1 and 2. The richer half and the richer half gets even further richer and viscous. If spirit still number 1 is small, and its filled high, then it’s a bit of a copper contact. So taking it around twice is not really cleaning it to that same effect, so no cuts are taken. Everything that has gone around that second time is run through a third time with the set of heads from wash stills 1 and 2 because by this point, it has become way too thick and way too viscous. A spirit cut is taken from that. A spirit cut is taken from spirit still number 1 from every third run. Mortlach use worm tub condensers and the water is cold at 10 degrees, which means as soon as that vapour hits the copper, it turns back into liquid. So when the spirit is in liquid form, the copper cannot do its work, so every part of the production process is calibrated to create this character, and this has been calculated to be 2.81. “I know it is nearer to three than to two,” Georgie Bell adds. “Usually when you say triple distilled, you think of a lighter spirit. The 2.81 actually stands for the precision in the way that it has been distilled.”

Just picked up the 12yo tonight. I bought it because it was $20 CAD off sale (regular $100 CAD). I enjoyed your comments. It was a bit more spicy than I was expecting. A couple of drops of water opened up the oak and vanilla notes. I will come back to it in a couple days to compare.

Sorry to have missed this. I got the 16 2 weeks ago and getting the 12 and 20 today. As far as the 16 I am with Bart. Not sure I would buy it again. I think the rare old is better. As for the 2.81 distillation, it is a mixture of triple and double distilled barrels. They marry them up to equal 2.81, which means that there are more triple distilled liquids than double. The old 18 year is still my favorite and the Gordon McPhail 25 year mortlach is awesome.

Watched this live premiere this morning. While I was out this afternoon seen and picked up the 12 year old @ $47. They did not have the older versions. I agree 90 out of 100. Great nose and palate. 🥃👍

Just bought the Mortlach 12 year, last one at my nearest Total Wine. I've never seen Mortlach on a shelf here in Michigan. Distribution must be new around here. Anyway, state min is $62.99 for the 12, $124.99 for 16, $199 for 20. Hope the 12 is worth the $67 after tax that I dropped. Cheers!

Thanks for the review guys. I found the 16 year on sale for $72 US at a local store here but it is normally $115 US. I'm wondering if it is 750 mL though. Anyway I am a big fan of the ex-sherry bottles unless I get a rotten cask flavour in it (Yep that just happened recently in a Berry Bros and Rudd store pick). Slainte

I'm about 2/3rds of the way through the 16 took me a while to get into it but really enjoying it. Will get the 12 next. The bottle looks like a giant fancy perfume bottle with cut glass. Too bad it's chill filterd and colored. Cheers

Get where Bart is coming from with the roasted finish I get that on the 12 especially when left to sit in the glass for some time, was thinking barrel char/worm tubb influence ?

i love old mortlach - but over 200 € / $ for a 20 year old with 43 % abv ... ?? thats tough. i have 2 independent bottlings aged 22 and 23 years in first fill sherry butts @ cask strength ...and they were around around 140-150 €s. i really think those are the better buys, even though i get the appeal of official bottlings.
