Here are the portions based on 2 pounds / 1 kg of meat
Marinade:
• 2 chunks or 2 tbsp of red fermented tofu
• 4 tsp Chinese 5 spice
• 4 tsp White pepper
• 4 tsp Oyster sauce
• 2 Tbsp Shaoxing wine
• 2 Tbsp Dark Soy Sauce
• 8 Tbsp Sugar
• 2 Tbsp Maltose / muk tong
• 2 cloves Garlic minced
Finishing Glaze:
• 2 Tbsp maltose
• 4 pieces rock candy
• 1 Tbsp Honey
• 2 tsp salt
• 1 cup marinade (from above)
