The cake above was a recipe that had to be baked in a wide pan.
I got a lot of questions about whether it is okay to bake in a high pan, but it was impossible with that recipe.
It was difficult to make if you have a small oven or don't have a wide pan.
So, I tested a recipe that anyone can use by baking it in a mold they have and cutting it horizontally.
This recipe is the result.
You can bake it in a general cake mold and cut it horizontally.
I used chocolate syrup for the syrup to give it a more intense chocolate taste, and the taste and flavor were better.
It's called chocolate syrup, but it's not sweeter than other syrups.
Cream made with white chocolate ganache cream.
Actually, the condition of the ganache cream improves when all the ingredients are mixed and then aged for one night, but I think the cake I made this time will be about the quick method of the ganache cream.
So the temperature and texture are important.

6 egg whites ( 210g)
120g sugar ( 1/2 cup + 1 Tbsp + 1/2 Tbsp)
7.5ml Lemon Juice ( 1/2 Tbsp ) -Optional
55g milk ( 3 Tbsp + 2 tsp )
30g unsalted butter ( 2 Tbsp )
● Dark white chocolate ganache cream
80g (1/2 cup) white chocolate
80g warm whipped cream ( 1/3 cup )
320g cold whipped cream (1 cup + 1/2 cup)
30g mascarpone (can be omitted if not present)
5ml Kirsch ( 1 tsp )
● Chocolate syrup
50 g water ( 3 Tbsp + 1 tsp )
35g sugar ( 2 Tbsp + 2 tsp )
4 g cocoa powder ( 2 tsp )
5ml Negrita Dark Rum ( 1 tsp )

What is Gluten?
It is a protein insoluble in water as a by-product of the production of wheat starch, which is a unique property of wheat.
Gluten is difficult to digest and can also cause gluten intolerance.
Flour contains about 70% carbohydrates and 10% protein.
About 80% of these proteins are gliadin and glutenin.
When kneaded with water, gliadin and glutenin combine to form a net structure.
This is our favorite chewy gluten.
Among modern people who enjoy wheat-processed foods such as bread, sweets, noodles, and tempura, many suffer from gluten-sensitive bowel diseases such as indigestion due to gluten, an insoluble protein contained in wheat.
When nutrients enter the body, our body rejects them without absorbing them. The typical symptom of gluten intolerance is digestive problems such as bloating and abdominal pain.
Gluten-insensitive bowel disease is a symptom caused by the absence or lack of an enzyme that digests gluten. If a person who cannot digest gluten eats it, the intestinal mucosa is stimulated and the protrusions of the intestinal mucosa atrophy, making it impossible to absorb nutrients.
So people with gluten intolerance suffer from the inconvenience of having to adjust their diet for the rest of their lives.
In Korea, Japan, etc., where I live, there are not many celiac diseases in the East, but in the United States, where wheat is the staple food, 1% of the total population has celiac disease, so many people cannot eat wheat. There was a case.
So today, I made a gluten-free chocolate cake to enjoy a delicious
