When clarifying things how do you decide what to use eg. Pectinex, agar agar, milk washing etc.

Every process is ment for different liquid. Milk washing strips out some flavor and rounds up the "edges"; agar agar is meand for mostly acidic liquids (juices, cordials) and pectinex where I want to break down pectin enzyme.

Usually you can just hit a seal button while the pump is going, this will stop the pump and seal the bag before the liquid starts coming out the top of the bag. If you don’t have a fancy vacuum sealer like his.

I've heard of a relatively small (but growing) community who are against citrus in cocktails because it can easily overpower any delicate flavors you might be going for. Also since you have less acidity with verjuice, you also need less sugar to balance it making it a little "healthier".

You can find it in many known spirits (it doesn't have to be listed) and store bought drinks. I am not seeing it as a questionable ingredient. Do you have more info on that?
