For Besrat Dosai, we can soak 1 cup rice, half cup skinned Moong dal(manjal payatham paruppu) & grind all with reqd. green chillies, ginger,curry leaves & dhania leaves ( kothamalli), add salt& make pasrat dosai WITHOUT UPMA STUFFING.

Maami, I add red chillies, ginger, garlic, hing and fresh pudina 1 bunch and do a coarse grinding and then I add finely cut onions and fresh coriander, try making this you really don't need accompaniments like chutney or anything. It will taste heavenly if had hot and crispy right out of the pan. OORE MANAHKKUM, TRUST ME.

If you add red chilli it will affect the color and make the pesarattu dull, because red + green = brown. Green chilli is best.
