Okra Fries
200g Okra
1 tsp Garlic paste
1 tsp Ginger Paste
1 tsp Paprika
1 tsp Cumin powder
1 tsp Kashmiri Chilli Powder
1 tsp Salt
1 tsp Black Pepper
1 tsp Kasoori Methi
1 tsp Coriander Powder
3 tbsp Gram Flour.
3 tbsp of Water
Wash the okra in clean water and pat dry with kitchen paper.
Chop off the tops and cut the okra in half lengthwise and then cut the two halves in half lengthwise making four fingers and place in a bowl.
Add in all the spices including the garlic and ginger paste and gently mix into the okra ensuring that everything is coated.
Sieve in the gram flour and mix again ensuring that everything is coated in the flour.
Add in the 3 tablespoons of water and mix again forming a batter add more water if the batter is too thick and sticky.
Heat a pan of oil to around 150-160 degrees and add in the okra in batches, fry until golden brown, remove and allow to drain on kitchen paper.
