This Onam, we, the crazy sisters are going to share with you the recipe of Kerala's special dish Avial.
Onam, the 10-day long festival that celebrates the return of King Mahabali annually as well as the Vaman avatar of Lord Vishnu, will be celebrated from August 12 this year. But the actual festival, which is widely celebrated in Kerala, will start with Thiruvonam on August 21.
As per the Malayalam calendar, Onam is celebrated on the day of Thiruvonam nakshatram (Shravana asterism) in the month of Chingam.
Avial also called as Aviyal is a popular and traditional mixed vegetable dish from the Kerala cuisine.

Ingredients list:
Chopped Drumsticks (Mulankadalu)
Chopped Carrots
Chopped Raw plantain - Unripe bananas (Arati kaya)
Chopped Ash gourd (Budida Gummadi)
Chopped Green beans - any variety can be used
Chopped Elephant foot yam (Kanda)
All the above vegetables should be chopped into equal lengths.
Slit Green chillies
Chopped Coconut pieces
Coconut, Jeera and Green chillies ground together.
Curd
Curry leaves (Karivepaku)
Coconut Oil
Procedure:
Take a pan, Add the vegetables first which take a longer time to cook in a pan or pot. I have added elephant foot yam, Unripe Banana, Gummadi kaya, drumsticks, and all the remaining vegetables. Add slit green chillies and pour water. Sprinkle salt and close with lid. After the vegetables are slightly cooked add ground Coconut, Jeera and green chillies mixture to the pan, mix well and cook for some more time. Add Curd in the end and mix everything don't let it boil. Add Curry leaves for garnishing. Now add coconut oil. Avial is Ready.
