INGREDIENTS
Oreo® cookies 180 grams (16) for the base
Melted butter 50 grams
Oreo® cookies 50 grams (6) for the top
FOR THE CREAM
Spreadable fresh cheese 250 grams
Liquid fresh cream 250 grams
Icing sugar 40 grams
FOR DECORATION
Oreo® cookies 35 grams (3 divided in half)
Liquid fresh cream 100 grams
Separate 16 Oreo® biscuits and remove the filling with a knife, transfer it into a bowl and set aside.
Place these cookies in a food bag and break them up with a rolling pin to obtain a fine powder, transfer to a bowl and add the melted butter at room temperature, mix to obtain a homogeneous mixture.
Place a sheet of parchment paper in an 18 centimeters diameter springform pan.
Form a base with the cookies and butter mixture, press it with the back of a spoon i order to completely cover the base. Place in the refrigerator for at least 30 minutes.
In the meantime, mix the spreadable cheese with the filling taken form the cookies, then in a separate container, whip the cream together with the icing sugar with an electric whisk, incorporate the freshly whipped cream into the spreadable cheese mixture by making movements from the bottom upwards.
Then retrieve the base from the fridge and pour the cream inside, level the surface and place it back into the fridge.
Put 6 Oreos in a food bag and break them up with a rolling pin, this time more coarsely.
Take the cake out of the fridge and sprinkle the surface with the crumbled cookies, place again in the fridge for at least 1 hour.
Now whip 100 grams of fresh cream and place it in a pastry bag equipped with a star nozzle, then take the cake again and remove the sides of the mould.
Ultimately form 6 tufts of cream on the surface of the cake and complete the decoration with the Oreos divided in half.
