Uggani is an amazing dish made from a simple puffed rice /Borugulu.This is a popular snack from Rayalseema, south Andhra. . You can find Uggani being sold in road side shops in Rayalseema. They have this as a big heap with Green chilles decorated on top. Uggani is usually served with Mirapakaya Bajji.We can eat it as breakfast / Brunch /Snack /Dinner.
Ingredients:
Puff rice - 3 cup
Roasted chanadal & jeera powder 3 tbs
dry red mirchi - few
Mustard seeds -few
Cumin seeds - few
Oil - 2 tb
Chopped green chilies/Chilli,garlic,jeera paste - 3 n/3tbsp
Onion -1n
Curry leaves -8 n
Turmeric powder
Tomato -2 n
Directions:
First soak puff rice in a water 1-2 minutes and drain the water.
apply chanadal rosted powder and salt to soaked rice.
Heat oil in a pan add mustard seeds, cumin seeds, dry chillies, , chopped onions, curry leaves, turmeric, salt, slice tomatoes, add puff rice, ,chopped coriander, Switch off the flame and toss it.
Serve hot with mirchi bajji.
