Pan Fried Buns / Chinese pan-fried pork dumplings recipe:
Ingredients:
For Filling:
100gr cabbage
100g minced pork
20g chopped green onions
10g ginger
8g green onions head
30g hot water
1/4 teaspoon salt
1 teaspoon sugar
1/2 teaspoon oyster sauce
1/2 teaspoon light soy sauce
1/2 teaspoon dark soy sauce
1/2 teaspoon sesame oil
Skin:
150g flour (8- 10 % protein ). I use a very soft and highly bleached flour, you can use harder dough as well.
10g potato starch
2g instant yeast
2g baking powder
18g caster sugar
90 - 100g water
Pan-fried part:
3 Tbsp cooking oil
1 tsp roasted sesame
20g chopped green onions
240g water + 1 Tbsp flour
