Have +20 years using 3dsmax and I had never used Volume select. I was needing something like that just now and thinking wait this should be technically possible...and sure enough. Thank you!

Is there any way to use multiple Vol. Select modifiers in a row? Like your video I often see people use a second modifier to Deselect everything and keep it procedural, but they always end the tutorial and don't use any more Vol. Select on top. I ask because I'm loving this workflow but my upper Vol. Selects don't seem to grab polygons the way I would expect, compared to lower copies of modifiers in the stack.

Sure - just do it :). You can add another Volume select on top and switch to "Add" and then you should be able to select additional vertices with a different method or gizmo. Just tried it with a teapot - works without problems. You can also subtract. If you select subtract and Invert you should get a boolean intersection. Good luck!
