This mutton pulao is my grandmothers recipe. We had it every Navroz with masala daal. We Parsis call it Palao Daar.
The combination of having this mutton pulao with masala daal is just awesome !!
If you have not eaten it this way until now, you must try it !
Ingredients
Pulao masala
5 green cardamons
1 piece cinnamon (1 inch)
4 cloves
1/2 nutmeg
1/2 piece mace
1 tea spoon cumin seeds
(Grind all of the above and keep aside)
Mutton prep
500 gms mutton on the bone
4 to 5 green cardamons, 8 pepper corns, 6 cloves, 1 pc of cinnamon
3 large onions sliced
2 large tomatoes chopped
2 large potatoes (Large cubed)
2 tea spoons ginger garlic paste
1 and 1/2 tea spoon kashmiri chilli powder
1 tea spoon garam masala powder
3/4 tea spoon cumin powder
1/2 tea spoon turmeric powder
1 and 1/2 tea spoon salt
1 cup yogurt
6 to 8 table spoons oil
For Pulao Rice
500 gms basmati rice
5 green cardamons
4 cloves
8 pepper corns
1 pc cinnamon
1 bay leaf
1 tea spoon cumin seeds
2 and 1/2 tea spoon salt
1 table spoon oil
For the Garnish
1/2 tea spoon saffron
3 table spoons milk
2 table spoons chopped mint leaves
4 table spoons fried onions
2 tea spoons ghee
Yellow food color (Optional)
Method
Make the Pulao masala as mentioned above and keep aside
In a pressure cooker add oil and fry the potatoes on medium heat, until they are golden in color. Remove and keep aside
Add 5 green cardamons, 8 pepper corns, 5 cloves and 1 cinnamon pc to the oil and stir
Add the sliced onions and fry until they are golden brown
Remove some fried onions and keep aside ( You will need them for garnish)
Add the tomatoes to the fried onions and cook for a minute
Add the ginger garlic paste and cook fir another minute
Now add the kashmiri chilli powder, cumin powder, turmeric powder, garam masala powder and salt and cook everything for 3 to 4 minutes
Add the mutton and further cook everything for 3 to 4 minutes
Add 1 cup yogurt and cook for another 5 minutes, until the oil leaves the sides of the vessel
Add 1 cup water and stir everything and pressure cook for4 to 5 whistles
Wait for the pressure cooker to cool and them open it
The mutton should be like a semi dry gravy, if not then dry it up until oil leaves the sides
Add the fried potatoes to this and keep aside
Pulao Rice prep
Was and soak 500 gms basmati rice for 20 minutes, drain and keep aside
Fill a large pot with 3 litres water
Add 5 green cardamons, 8 pepper corns, 5 cloves, 1 pc of cinnamon, 1 bay leaf, 1 tea spoon cumin seeds and 2 and 1/2 tea spoon salt
Bring the water to a boil
Add the washed and soaked rice to this
Bring to a boil and cook for 10 minutes
Check if the rice is 90% done (almost cooked) remove from heat and strain the rice and keep asdie
Assembling the Pulao
In a large pot layer a thin layer of rice at the bottom
Then layer with all the cooked mutton
Add half the fried onions on the mutton, sprinkle 1 table spoon chopped mint leaves and 1 tea spoon pulao masala on top
Add to this 1 tea spoon ghee
Now add the remaining rice on top of this
Take 1/2 tea spoon saffron and mix it in 3 table spoons of warm milk
Add this on top of the layered rice
Add the remaining friend onions, 1 table spoon chopped mint leaves, 1 tea spoon Pulao masala, some yellow food coloring (optional) and 1 tea spoon ghee on top of the rice
Cover and cook on medium low heat for 15 to 20 minutes
This will steam cook the rice and the mutton, releasing all the flavors in that large pot.
Open and enjoy the amazing aroma of this fragrant mutton pulao.
