Nice that you roasted aubergines instead of frying them, but the passata needs to be cooked for at least 30-40 minutes to turn into tomato sauce (5 minutes is basically heating it up, it does nothing to develop the flavour). Better switch the garlic/onion order or the garlic will burn before the onions are done and burnt garlic is bitter as hell. Pasta looks like it wasn't cooked in enough water and possibly boiled for a bit too long.

exactly what I thought.. the onion was burnt, anyone makes cooking videos these days.. and imo it has too much passata and no ricotta

I have not been able to find Tomato PUREE in my local markets but I read that THICKENED Tomato Sauce will substitute just fine. Do you agree or not for this recipe?

She did not use tomato puree for the recipe, but Passata, which is what you get if you blend your canned tomatoes (it's just a texture thing). You can use tomato sauce or canned tomatoes for the recipe, just let it simmer for at least 20 minutes and they'll breal down enough

Use fresh tomatoes instead of just the jar one, and it would be perfect.

For sauces like this one use (good) passata or peeled canned tomatoes, they have a lot more taste than fresh tomatoes.

I always put zucinni and green peppers in and eggplant. Than cheese on top en some garlic yogurt on the side. Or caciki. I think it is the Greek way? 🧿

this is not right. I'm not a complete Italian cooking racist but this dish would taste much better if finished the right way with ricotta salata not parmesan. That's an integral flavor in making this dish what it is. It's not alla norma without ricotta salata. Also you burned the garlic and probably should fry not bake the eggplant but I was going to overlook that. But using parmesan is unconscionable if your'e trying to teach a traditional recipe

LOL. Try it with mushrooms or even broccoli roasted broccoli is delicious and mix it in with the sauce it's probably really good

you ltierally burned the garlic then put the onion over it and burned it even more. Stop puting garlic first, put it when the onion is done, then leave it like 30 seconds more, and then put the sauce. stop ruining your sauces like that please. Thanks

Usually i put onion first but if i want a strong garlic oil flavour i do my garlic like this however i take it out depending on the dish im making. They did that to get a strong garlic flavor that wont be overpowered by the pasta sauce
