Ingredients -
1 cup sona masoori rice, washed thoroughly and soaked overnight
1/4 cup grated coconut
A little salt
1/4 cup water +1 cup
For the stew-
1 bay leaf
3 cardamom
7-10 black peppercorns
1 cinnamon stick
1 tbsp oil
1 green chilli
1/2 tsp grated ginger
A few curry leaves
1 small Onion, sliced
1 small carrot, diced
1 small potato, diced
200-250g coconut milk
1/2 cup cauliflower and french beans
1/4 cup green peas
Salt and sugar, to taste
Some water, to adjust the consistency
1-2 tbsp chopped coriander
Vishesh Tippani-
Wash the rice 4-5 times till the water becomes clear
The consistency of the batter should be like that of a buttermilk.
The batter should be smooth, not at all gritty
Always pour the batter on a super hot tawa else the net like structure won't form
Cool the neer dosa for 30 seconds before folding
Serve with Hot Stew
