Piaya
Piaya or Piyaya is one of the popular delicacies of Bacolod. This is the best pasalubong you can give to your friends and families. Piaya is an unleavened flat bread; there is no yeast or baking powder. The dough is simply made of flour, water and shortening. It is filled with a ball of muscovado sugar and it is cook in the griddle over low fire. You can also fill the piaya with Ube and Mango filling. This recipe is so easy that you can make this at home using a frying pan and you can make your own twist.
Dough:
Version #1
2 cups all purpose flour
1/2 tsp salt
1/4 cup cooking oil(Minola Coconut oil)
1/2 cup water
Version #2
2 cups all purpose flour
1/2 tsp salt
1/2 cup margarine, softened but firm to touch
1/2 cup water
Muscovado filling:
1 cup all purpose flour
1 1/4 cups muscovado sugar
1 1/2 tbsp cooking oil
2-3 tbsp water(more if needed)
Ube filling:
1 cup Ube Halaya
1/2 cup all purpose flour(more or less)
*add sugar if you want it to be sweet
