I need to explain a little, now that I'm starting to use electric ovens and tangkring ovens, I can pick 1 important point so that the nastar doesn't crack:
1. ADJUST THE TEMPERATURE WITH THE CAPABILITY OF EACH OVEN.
My oven has a large capacity, fits a 40cm pan, the temperature of nastar 150C is the best. But when I try it in a smaller oven, 150C is too hot, the result is always cracking. So make sure you know each other's oven. The temperature varies depending on each oven, can be 110-150C the length is adjusted to golden brown.
2. GREAT FOR ELECTRIC OVEN AND DI
OVEN FIRST, NEW OIL DIFFERENT
For electric ovens and those in the pre-oven, or small ovens be it tangkring or electric, you need a little honey to get golden brown, and for those in the pre-oven you need more melted butter or oil, about 2 tsp for this recipe. My oven doesn't need honey, with honey it looks like it's burnt, so each oven needs a different spread
3. NASTAR KEY IS NOT CRACKED NOT FROM THE RECIPTION BUT FROM POINT NO 1
Recipes:
- Nastar skin
- 200gr Margarine
- 200gr Creamery Butter
- 50gr powder sugar
- 4 egg yolks
- 50gr cornstarch
- 50gr milk powder New Zealand Milk Powder
- 550gr low protein flour
Stuffing: 700-900gr pineapple jam (90rb)
Spread:
7 egg yolks (14,000)
1/2 tsp melted butter
Put the dough in the refrigerator so that it is easy to pulverize and is not greasy if you make a lot. It's not smooth, you can skip it, but I always put it in the fridge, so when I make fa, the dough is soft because it's melted nastar.
Addition of 20% for the cost of Water, Electricity, Gas, labor. This is not for electric ovens, because electric ovens are not suitable for business, wasteful🤑
So not including profit

What is the selling price? Guess what, in my opinion, 100,000 is appropriate for retail/retail buyers

Oven at 150C, lower heat for 20-25 minutes depending on each oven, so adjust it
Before all the golden brown, it's still brown, turn off the heat, use the top fire for 1-2 minutes until the desired color is achieved
Let stand in the oven without fire for 1 minute then take it out and let it cool
For those who are in the OVEN first, then they are oiled
Electric/gas oven
Oven first 20 minutes at a temperature of 150 fire up and down
Wait for it to cool before applying
Spread every 1 egg yolk with 1/4 tsp melted butter or vegetable oil. So for 6 egg yolks, the melted butter is 1-2 tsp
Then oven again at 150c, fire up and down for 15-20 minutes until the desired color is reached (the length depends on each oven)
Tangkring oven
Oven first at 150C on medium heat for 30 minutes
Wait for it to cool before applying
Oven again at 150C for 30-40 minutes until the desired color is achieved
