Never worked on a gas fryer, how do the vent / flue?

Typically just an open stack at the back of the fryer, relying on the hood exhaust and make up air being balanced.

What you saw wasn’t popping beyond normal operation. I could monkey with the gas pressure to dial in the “proper” pilot and burner ratios but these locations bring their makeup air behind the fryers and they roll thru the bellies of them and blow out the pilots. This was one of the restaurants I manage, so I can get away with being like… “it’s good” I showed the staff me turning it on and off repeatedly without issue. 🤷♂️

No your not. If that were a service call for a boom I would have had to dig much deeper. But given it’s one of my restaurants and my staff, we’re good with “it’s working” 😂

I would advise breaking out the manometer just to make sure gas pressures not WAY out of whack.

@@restaurantrepairs never seen makeup air behind the fyers, but my hotside point of reference is one property (horse race track / casino multiple concession stand/bars, three prep kitchens)
